The Sweet Potato Zucchini Muffins are Gluten-Free and Paleo, so with chocolate they are a win-win for me.
A perfect healthy and sweet treat on a beautiful Friday. And what better way to savor my sweet tooth!
Below is the recipe for these delicious muffins courtesy of Choosing Balance!
Note: I couldn't find coconut flour, so I replaced it with Gluten-Free flour. Still delicious!
Ingredients:
3 eggs
2/3 cup cooked and peeled sweet potato
1/3 cup + 1 tbsp coconut flour coconut flour
1/4 cup maple syrup
1/3 cup finely shredded zucchini (pat dry)
1 tsp baking powder
2 tsp cinnamon
1 tsp vanilla or 1tbsp vanilla collagen
2 tbsp applesauce (or 2 tbsp coconut oil)
1 tbsp coconut oil
1/2 cup chocolate chips
Instructions:
In a bowl, whisk the eggs.
Then add in sweet potato and mash it.
Add in everything else besides the chocolate chips.
Mix well.
Then fold in the chocolate chips.
Line a muffin tin with muffin liners.
Makes 9 muffins. Fill about 3/4 of the way.
Bake at 350F 38-40 minutes. Let cool completely.
