It's a hot day today, so I decided to wear something light weight and cool. I found this lime green sundress in my closet. The color reminded me of key limes. My mom absolutely loves Key Lime pie. I wanted to make her a surprise treat. Key Lime pie is a perfect dessert for a sunny day like today.
I was searching on the internet for gluten-free Key Lime pie and found a blog, Let Them Eat Gluten Free Cake.
The recipe is so simple and easy! I did buy a pre-made Gluten-free crust because I couldn't find any gluten-free graham crackers. It also took awhile to squeeze enough limes for 1/2 cup!

Recipe from Let Them Eat Gluten Free Cake:
Ingredients for crust if you choose to make it:
• 2 cups of gluten free graham crackers
• 2 tbsp granulated sugar
• 3 tbsp butter, melted
Filling:
• 1 14 ounce can sweetened condensed milk
• 4 large egg yolks
• 1/2 cup key lime juice, fresh or bottled-----I squeezed!
Topping:
• 1 cup heavy whipping cream
• 1/4 cup powdered sugar
• 1 tbsp vanilla extract
